My friend Mary Rodeback taught me this amazing recipe. We like it with steak -- as Mark Bittman says, when you're going to have a good time eating, enjoy!
Saute two heads of spinach with
some ham stock, as the spinach wilts
add 4 oz of (or more) or cream cheese and
a handful of Gorgonzola.
